{"id":16368,"date":"2025-11-26T09:35:36","date_gmt":"2025-11-26T09:35:36","guid":{"rendered":"https:\/\/test.itc.cnr.it\/wordpress\/?p=16368"},"modified":"2026-02-25T14:22:22","modified_gmt":"2026-02-25T14:22:22","slug":"sostenibilita-della-filiera-alimentare","status":"publish","type":"post","link":"https:\/\/test.itc.cnr.it\/wordpress\/sostenibilita-della-filiera-alimentare\/","title":{"rendered":"Sostenibilit\u00e0 della filiera alimentare"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\">Una delle maggiori sfide odierne \u00e8 garantire un\u2019alimentazione sufficiente e nutriente alla crescente popolazione globale, assicurando allo stesso tempo equo accesso alle risorse, sostenibilit\u00e0 ambientale, economica e sociale, come sancito dagli obiettivi dello Sviluppo Sostenibile dell\u2019Agenda 2030 dell\u2019ONU.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">&nbsp;La filiera alimentare \u00e8 una fonte significativa, ma a volte sottovalutata, di emissioni, dipendendo fortemente sia dalle fonti energetiche che dai trasporti. I sistemi alimentari contribuiscono globalmente a una quota compresa tra il 20 e il 40 % alle emissioni di gas serra (GHG).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">La filiera alimentare richiede ampiamente processi termici, sia di raffreddamento che di riscaldamento.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Secondo l\u2019Istituto Internazionale del Freddo, il 12% del cibo prodotto a livello globale nel 2017 \u00e8 andato perso a causa di una catena del freddo insufficiente. Nello stesso studio viene evidenziato come una catena del freddo \u201cmigliorata\u201d, ovvero estesa a livello globale e basata sulle tecnologie allo stato dell\u2019arte, consentirebbe una riduzione delle emissioni fino al 50%.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I processi termici nella filiera alimentare sono ancora prevalentemente legati all\u2019uso di combustibili fossili. In considerazione dei livelli di temperatura richiesti, la sostituzione delle caldaie con pompe di calore a media&nbsp; alta temperatura e la rivisitazione dei processi apre la strada alla decarbonizzazione dell\u2019industria alimentare. L\u2019analisi database e lo sviluppo di modelli data-driven \u00e8 necessario per il calcolo delle emissioni e dell\u2019impatto ambientale nel settore RACHP.<\/p>\n\n\n\n<div
